Healthy Greek Yogurt & Granola Bowl

Sooo I haven’t blogged in quite some time… I’ve been trying to diet and shed off those extra pounds I got from the previous blogs. I have been completely addicted to those Acai Bowls! They are so yummy!! I just can’t get enough. But, it’s not always easy to run to Jamba Juice all the time so I came up with an alternative that I think will ease my craving. Instead of trying to blend up some acai, I got some greek yogurt instead. One day I will definitely learn how to make my own acai bowl, but for now this lazy bowl will do.

It’s easy, just add some greek¬†yogurt to your bowl, granola, raw sliced almonds, drizzle some honey, slice up a banana and stuff your face ūüôā

I used KIND oats and honey clusters with toasted coconut. It’s really good and only has 4g of fat and 130 cal. You can use any granola you want, just try to keep it under 5 grams of fat to keep it healthier. For the greek yogurt I used vanilla Dannon Light & fit Greek Yogurt. It taste really good and not as thick as other greek yogurt I’ve had.

Roasted Bruschetta

I’m not a big fan of uncooked tomatoes so I came up with a delicious roasted tomato¬†recipe for bruschetta. It’s so simple to make and the perfect appetizer. My sister and her family came over for dinner this week and I made it with my chicken piccata. Ending with the most delectable cheesecake (my sis brought and left for me to stuff my face for days), I think everyone went home with happy tummies and my dinner party was a success ūüôā

Ingredients:

  • 10.5 oz.¬†carton of cherry tomatoes
  • 1 clove of garlic
  • olive oil
  • .66 oz.¬†carton of fresh basil or a handful
  • Salt & pepper
  • French bread baguette
  • cup of¬†shredded¬†mozzarella cheese

Directions:

Set your oven to broil. Rinse tomatoes and place in a shallow pan. Mince 1 clove of garlic and toss into pan with tomatoes. Drizzle tomatoes with olive oil and sprinkle with salt and pepper.

Broil for 15 minutes or until tomatoes blister and start to burst. While to tomatoes are roasting, rinse and chop up basil julienned style (cut into long thin strips) and place in a large serving bowl.

Remove tomatoes ¬†from oven and set aside until cooled slightly. Be careful of bursting tomatoes! I’ve been popped a few times! Smash tomatoes up with a fork and add to the basil and mix to combine.

Set oven to 450 degrees. Slice up baguette and drizzle with olive oil. bake until slightly toasted. about 5 minutes.

Top the bread with tomatoes and a sprinkle of cheese and enjoy!

**another fun way to serve these is to build them and bake the cheese on top. Either way is really delicious!

Oreo chocolate cake

My husband recently had a birthday and he asked for an Oreo cake so I decided I would try to make one.

I am guilty of using boxed cake but to my defense no one can tell the difference. I just make sure I pull them out of the oven just before they are about done so they are nice and moist.

The trick to getting them to be flat and even is to refrigerate the layers over night and then cut the rounded top off with a cake knife or I used a large bread knife. I also used a round spring board pan to insure that my cake came out in one piece. Being refrigerated will also keeps the crumbs away when you are frosting.

I used 2 boxes of chocolate fudge cake from Betty Crocker and my own recipe of butter cream frosting. I smashed up about 10 Oreos and added it to the frosting while mixing.

Oreo Butter cream frosting:

  • 3¬†cups powdered sugar
  • 1¬†cup butter
  • 1 teaspoon whipping cream
  • 1/2 teaspoon vanilla
  • 1/2 cup smashed Oreos

Directions

With a hand mixer , mix together sugar and butter until smooth. Mix on low speed then increase speed to medium and mix for another 3 minutes. Add vanilla and cream. Add more cream if needed. Then add Oreos and mix until blended.

Now time to build your cake!

I made 3 layers of cake and put a generous amount of frosting between each layer. Then the trick to get the top layer to look perfect is to flip it upside down. Then I smoothed on the rest of the frosting and piped some swirls on top for the Oreos to stand on and then crushed up a few Oreos and sprinkled them over the top of the cake and pressed them on the sides.

I was so happy with how the cake turned out and it taste so yummy! My husband was a very happy birthday boy!

Bbq chicken pizza

I’m all about the simple meals I can throw together fast and that my family really enjoys. My husband really likes bbq chicken pizza so I thought I would try to whip one up at home. I’m pretty sure this recipe will be on repeat for a while.

The trick is using a few store bought items but if you got the time and skill to make dough from scratch then go for it! I picked up some pre made pizza dough from the store (Stone Fire brand thin crust), my favorite bbq sauce (sweet baby rays), smoked gouda cheese, mozerella cheese, boneless skinless chicken breast and cilantro.

I baked 1 chicken breast smothered in  bbq sauce for 25 mins on 350 degrees. Covered the pizza dough with desired amount of bbq sauce, chopped up chicken, then covered with desired amount of mozzarella, and about a handful of shredded smoked gouda. I baked the pizza on the rack for the time needed for that type of dough and then added cilantro and we stuffed our faces. I really think the type of bbq sauce and the smoked gouda made all the difference!

This recipe is really so easy, took me about 30 mins including chicken cooking time. If you have left over chicken it could take less than 15 mins! imagine that!

front porch love

I’ve been neglecting my front porch since we moved here, partly because I can’t keep a plant alive, my neighbor says I have bad hands…

With Easter coming soon, I decided to give my porch some love.

I’ve had a plain grape vine wreath already on my door and I just added some branches with eggs that I got from Michael’s and tied it on with some twine. The whole project I made from Michael’s.

Then I got a pretty Jasmine plant and a tin watering can. I added a chalkboard vinyl sticker to the can for a welcome sign. The rubber mat is from Target, it was black so I spray painted it white and roughed it up with sand paper for a more rustic look.

Im pretty happy with how it came out and I didn’t spend much money. The Jasmine smells so good and I just hope I can keep it alive!!

DIY salt & pepper shakers

My house is an endless project, always adding and changing. I don’t believe in decorating all at one time. I feel that to create a great space it takes time collecting pieces until it all comes together. Sometimes it never comes together because I decide to change it up! Drives my husband crazy, but he just doesn’t understand ūüėČ I’ve been needing a house project and surfed Pinterest until I found the perfect one. I think Pinterest needs a support group because one can get addicted!

I was in need of some cute S&P shakers and found a DIY that some one did so I decided to give it a go and change it up to fit my homes style. It was so easy! I did this project in 5 minutes and it only cost me around $5. Score!

I got everything at Hobby Lobby. Most of the things there are usually on sale or you can use a 40% off coupon that you can find online.

All you do is hammer small holes into the top of the jar cap with¬†a nail¬†and add vinyl chalk board¬†labels to the front. You can also paint the jars with acrylic paint and distress them with sand paper for a shabby chic look. Add salt and pepper and you’re¬†ready to season with style¬†ūüôā

I think it turned out really cute and is a perfect addition to my table décor.

Chicken Piccata

Chicken Piccata is one of my favorites to order at restaurants. I just love the lemony flavor and capers mmmmm. So I decided to try to make it myself at home, it came out even better than the one I ordered from Cheesecake Factory over the weekend! I was very happy with the result so I wanted to share it with you all.

I got the recipe from Giada De Laurentiis¬†and made a few changes to it. I added a splash more stock and half a garlic clove minced. I just realized I forgot to put in the parsley in the end but I guess it wasn’t missed… add it if you want.

Ingredients:

  • 2 skinless and boneless chicken breast, butterflied and then cut in half or use thin sliced
  • Sea salt and freshly ground black pepper
  • All-purpose flour, for dredging
  • 6 tablespoons unsalted butter
  • 5 tablespoons extra-virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken stock, or more if needed
  • 1/4 cup brined capers, rinsed
  • 1/3 cup fresh parsley, chopped
  • 1/2 clove garlic, minced

Directions:

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock, garlic and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning and add more stock if it is too tart. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Serve with your favorite pasta and veggies. I served it with parmesan mashed potatoes, sometimes my German/Italian side comes out in my food. I can eat potatoes with every thing!
